i am a senior in southern california right now and i need to "shadow" someone to finish my senior project. i would like to find a chef and tell them about my project and see if they can show me the ropes for the day so i can graduate. culinary school websites in the area like the international culinary institutes require you to register and stuff before you get any phone numbers or anything. anyone have a number i can call or where i can find numbers to chefs or schools for referrals?



Most of the chefs I know are rather proud of their culinary skills, and wouldn’t mind show/sharing them to a student.I would suggest finding a local owned cafe and ask the cashier/hostess if the chef/sous is available.Mid morning or afternoon is best time for this.Let him/her know what’s up and offer to sign a insurance waiver for liability, case you get hurt.Local owned would be the key,corporations, sadly, would site the liability as an issue.Congratulations on your graduation this year.

I would love to be a pastry chef when I grow up (16 now) but i’m not sure if I can do it or what I need to do. I think it’s called culinary school but i’m not sure if that’s the right word or how you spell it so I didn’t put it in the title of this :o so if you are a pastry chef could you tell me what you did to get there?

It really depends on where you live and how much you want to spend on school If you don’t mind going to New York you can go to the CIA it has been considered the best for quite some time. Johnson & Wales University in Providence is good. On the west coast a hot spot is San Francisco lot to choose from Seattle has vary good one. I myself went to 2 schools one more renowned then the other . You can find a good one in almost any state. My advice to you would be to check them out to find if the pastry program is any good. Some may be small and only teach a little some may be so massive you cannot learn a thing because the instructor can’t help you. CIA has a lot students not my favorite setting for hands on learning, but it is the CIA. If you have an art Institute near by check them out it is not the best by far but you will get a good basic foundation. Technical or community collage is also a great way to go the cost is low but the education and real AA or AS degree is transferable to university as a Junior with the A.A degree

you don’t need to know much when you start but you will have to study like crazy but Its nice to have a class that is called chocolate 1 ,2 ,or 3. Oh the fun of tempering chocolate
